Self-Saucing Peach Pudding

This recipe was torn out of a booklet so I do not know where it came from. I have had it for years though. It is so good it will be made again for sure.

Self-Saucing Peach Pudding

 Ingredients:

 1/3 cup butter
1 cup unbleached flour
 3/4 cup white sugar
1 tbsp. baking powder
1 tsp. ground cinnamon
3/4 cup milk

Sauce:

4 cups sliced peaches
3/4 cup packed brown sugar
1/2 tsp. cinnamon

 Directions:

Preheat Oven to 350 °

Serves 4 to 6

In a 8 cup baking dish, melt butter in 350° oven.
In medium bowl whisk together flour, sugar, baking powder and cinnamon until blended;
whisk in milk until smooth.
Pour over melted butter and whisk until blended.

Sauce:
In a medium sauce pan over medium-high heat, bring peaches, brown sugar and cinnamon to boil;
simmer for 2 to 3 minutes.
Pour over batter.
Bake for 30 to 35 minutes or until cake has risen to top and is puffed and golden.
Serve hot.
